摘要
以过氧化值和酸价为指标,研究了TBHQ在广式腊肉中的应用效果。结果表明,TBHQ具有较好的抗氧化性能,能有效抑制腊肉中过氧化值的升高,但对酸价的抑制作用不大。
The application of TBHQ on Cantonese cured meat during storage was studied according to peroxide value and acid value. The results showed that TBHQ had a good effect of restraining peroxide value, but insignificant effect of inhibiting the raise of acid value.
