摘要
通过4种不同的体系(猪油、羟自由基、亚硝酸盐、DPPH·)研究了苦瓜粗提物经H103大孔树脂纯化的各洗脱样的抗氧化活性,结果表明,20%乙醇洗脱样的抗氧化效果最佳,在其对油脂的抗氧化体系中,其抗氧化性和维生素C相当。
The antioxidant activity of Momordica charantia L. samples purified by H103 resin is studied from four different systems of oil, hydroxy free radical, nitrite, DPPH · . The results show that the antioxidation effect of the sample eluted by 20% ethanol is the best, and its antioxidant activity is as the same as Vc in the system of oil.
