摘要
简述了我国食品安全的重要性,分析了食品打假鉴伪问题的必要性和紧迫性,阐述了常规理化法、现代仪器法、指纹图谱法等食品检测鉴别技术的进展,提出了建立现代食品分子检测鉴别技术体系的建议。
The importance of food safety as well as the necessity and urgency of preventing adulterate food was reviewed; the updated progress of food authenticity methods were summarized; and establishment of advanced detection system for food authenticity was proposed.
