麦芽糖醇类产品主要是指结晶麦芽糖醇、液体麦芽糖醇、麦芽低聚糖醇和异麦芽低聚糖醇。本文简要介绍这类功能性糖醇的品种规格和生产技术;它们的理化性质和生理功能;以及在无糖糖果(硬糖、充气糖和胶姆糖)、低热量食品生产中的应用。
Maltitol-type polyols mainly mean crystall maltitol,liquid malfitol, oligomaltitol and oligoisomaltitol. This paper briefly discuss various specifications of such function polyois, and their manufacture technology;physio-chemical properties and physiological function. The application in sugar-free candies( hard-boiled goods, aerated candy and gum confection)and in low-calories food are discuss at last.
