摘要
以牛肉为主要原料加工烟熏牛肉方腿。通过试验选择复配胶作为该产品的粘合剂,通过烟熏等手段及防腐剂的选择和配制,研制出口感好、脂肪含量较低并具有烟熏牛肉风味的方腿。
Beefs was the main raw materials to produce smoking beef square ham. Compound letex was chosen to be the binder of this product by the test. And through selecting and making-up of smoking method and preservative, etc, the square hams were produced, which tasted nice, having low tallow content and the flavor of smoking beef.
