摘要 用含氮化合物处理番茄匀浆,在番茄采后提取前处理阶段,进一步提高番茄红素的合成量,安全有效地降低番茄红素的生产成本,并对含氮化合物进行了筛选。结果表明,最佳含氮化合物硫酸铵处理的条件是:添加硫酸铵20 mg/g、TBHQ0.3 mg/g于番茄匀浆中,25℃下恒温处理60 min;乙酸乙酯提取物中番茄红素的含量提高了46.2%。 Lycopene could prevent and cure cancer and cardiovascular disease and had better prospect in medicine and functional food market. The impact of nitrogen compound on the biosynthesis of lycopene in fruit homogenate was studied in order to improve the lycopene output and reduce the production costs. Nitrogen compound was firstly screened. The optimal condition was adding 20 mg/g ammonia sulfate and 0.3 mg/g TBHQ into tomato homogenate under 25℃ for 60 min. Lycopene content in its ethyl acetate extracts increased by 46.2 %.
