摘要
对食品在不同贮藏条件下的温度变化进行试验研究并与理论模拟进行对比分析。通过试验验证,试验结果能与数值模拟结果较好的吻合;在试验的基础上对某些参数进行对比,得出在不同贮藏条件下参数的变化情况以及应采取相应的措施,为食品冷冻冷藏工程的实践提供理论依据。
Experlment study of temperature change under different condition on food vacuum storage was carriedout. Through experiment study, the results of experiment and simulation can tally well. Comparing some parameters on the base of experiment, change of some parameters and relevant measures were obtained, which providing the theory basis for the freezing practice of food.
