摘要 目的调查坑梓工厂集体食堂的卫生状况,为加强集体食堂食品卫生安全管理提供依据,预防重大群体性食物中毒事故的发生。方法按《餐饮业和集体用餐配送单位卫生规范》和《深圳市龙岗区工业区食堂整顿与建设工程方案》规定的内容,对辖区内的工厂集体食堂进行现场调查和监测。结果共调查298户集体食堂,卫生许可证持证率为82.21%,食堂从业人员健康证、培训证的持证率为88.95%,厨房总面积与就餐人数匹配有221间,合格率74.16%,卫生设施的合格率为74.50%,经营前将设计图纸送交卫生审查的只有29户,合格率仅为9.73%。结论实施卫生规范后,辖区内集体用餐卫生状况、设施等取得明显的效果。加强集体食堂的卫生安全管理,注重监督质量,是卫生状况改善的有效方法。 Objective To investigate the sanitation state of collective canteen of factories in Kengzi, provide evidence of strengthening safety management of foodstuff sanitation of factories' collective canteen and prevent the accident of great collective food poisoning. Methods According to 《sanitation criterion of eating and drinking industry and matching and delivering unit of collectivity's having dinner》and 《dinning room's neatening and construction engineering project of Longgang's industrial park in Shenzhen》, factories' collectivity dinning rooms were investigated and supervised. Results 298 collective dinning rooms were investigated, possession rate of sanitation licence was 82.21% ,possession rate of health card and training card of employees of eatery was 88.95%, the room number of kitchen's total area matched by repasting number was 221,eligibility rate was 74.16%, eligibility rate of sanitation was 74.50%, before management, plans of 29 doors were delivered to make sanitation examination, eligibility rate was only 9.73%. Conclusion After sanitation criterion was put into practice ,sanitation condition of collectivity's having dinner has obvious effect. It is necessary to strengthen management of sanitation safety of collectivity dinning room and pay attention to quality supervision.
