摘要
综合研究了乙烯利提高番茄匀浆中番茄红素合成量及细胞溶出率的作用,实验表明,最佳条件为调番茄匀浆pH5.0,添加乙烯利1.4%,BHT0.03%,25℃下恒温处理90min,50℃下恒温处理90min,其乙酸乙酯提取物中番茄红素的含量提高了53.3%。
The impact of ethephon on the lycopene' s biosynthesis and cell dissolution in tomato homogenate was studied in this paper. The best condition is: pH 5. 0, ethephon and BHT was added to the tomato homogenate until the final concentration to 1.4% and O. 03% under treated at 25℃ for 90min and 50℃ for 90min. The content of lycopene in its ethyl acetate extraction increased 53.3%.
