摘要
将酵母接种在添加亚硒酸钠的培养液中进行驯化,获得富集有机硒的酵母用于烹调黄酒的酿制.采用正交试验得到的最佳生产工艺条件为:酒药接种量为1.5%,富硒酵母接种量为6%,发酵温度32 ℃,发酵时间为4d.该调料感官指标与普通黄酒基本一致,但有机硒含量可达16~17 μg/mL.
The yeast was cultured in the culture solution that was added to Na2SeO3.The yeast that Se-enriched was used to produce rice wine.The best process conditions obtained by orthogonal test is that the adding amount of koji is 1.5%,the adding amount of yeast which Se-enriched is 6%,the fermented temperature is 32 ℃ and the fermented time is 4 days.The culinary rice wine is the same in sense opinion index as the ordinary one,while the content of organic-Se can reach 16~17μg/mL.
