摘要
作为人类蛋白质的主要来源之一,小麦种子贮藏蛋白质的组成、结构及其功能一直为研究者所关注.随着研究的深入,对于麦谷蛋白基因的染色体定位、结构特点也逐渐为人们所了解.这对于改善小麦籽粒的品质具有非常重要的意义.对近年来小麦麦谷蛋白亚基(高分子量麦谷蛋白亚基HMW-GS和低分子量麦谷蛋白亚基LMW-GS)的提取分离、凝胶电泳(SDS-PAGE)、高效液相色谱(HPLC)、毛细管电泳(CE)等分离技术及其编码基因的染色体定位、多态性变化等方面的研究进展作一简要概述.
As an important protein source of human being, the composition, structure and function of wheat storage protein were much concerned by scientists. As research goes further and further, the location, structure of wheat glutenin chromogenes are gradually known to people. This is very important to improve the quality of wheat flour. This paper introduces the technology of extraction, purification, sodium dodecyl sulphate polyacrylamide gel electrophoresis (SDS-PAGE), reserved-phase high-performance liquid chromatography (RP-HPLC), high-performance capillary electrophoresis (HPCE) for HMW-GS and LMW-GS and their genes.
