中国人认识餐饮工业化这一概念是从麦当劳、肯德基进人中国市场开始的。以二者为代表的西式快餐,以其产品标准化程度高、卫生便捷等特点很快赢得了中国消费者的喜爱。工业化给西式快餐带来的成功是显而易见的,但中餐是否适合走工业化道路却令很多人担心。中餐与西餐的最大差别之一就是中餐难以做到标准化生产。
Industrialization benefits western fast food development obviously. But many people are questioning whether the industrializa-tion is applicable to the Chinese cuisine. The greatest difference of Chinese cuisine from western food is that Chinese food can hardly be standardized. Because of the various courses and complicated cooking process, the final products of Chinese food are difficult to control when applying mass production.Is that possible the chain stores of Chinese food could rapidly increase with the help of industrialization? The experience of Zhen Gongfu has shown a real enlightenment. Zhen Gongfu applies modern management skills, separates logistics from kitchen and establishes a center of material processing and distribution. All the traditional cook-ing processes are moved from kitchen to logistics and monitored with the same standard. Then the semi finished products are vacuum-packed and transported to dining rooms by refrigerated vans. And in Beijing, a new family kit-meal recently shows in market, which indicates innova-tion and revolution in fast food industry. Since two key difficulties are finally conquered, which are food shelf life and preservation of taste and appearance, more and more people realize that Chinese fast food industry can not imitate western models superficially. Instead, we have to achieve standardization and maintain the taste. That could enable the Chinese fast food to be industrialized and competitive.
