摘要
定期测定了储良龙眼(Longan chinensis Sonn.cv.chuliang)果实在不同贮藏条件下的纤维素酶活性,并探索其与果肉自溶的关系。结果表明:常温和丙烯处理后,随着贮藏时间的延长,果肉纤维素酶的活性逐渐增强,最大值分别出现在第4天和第5天,果肉自溶指数也随之增高,二者的变化趋势一致。4℃下贮藏1个月时,纤维素酶活性变化较小,始终保持在100μg/(mL.h)左右,此条件下贮藏的果实只在贮藏后期开始自溶,但在之后的货架期纤维素酶活性迅速升高,24 h就达150μg/(mL.h),自溶指数也迅速提高。
In the present study,cellulase activities of longan (Longan chinensis Sonn. cv. chuliang) fruit under different storage conditions were investigated, and the relationship between the activity and pulp autolysis was also identified. The results showed that the cellulase activities exhibited progressive increase when the fruits treated with or without propylene were stored at ambient temperature,with the peak values being on the fourth and fifth day, respectively. The trend of cellulase activities was in line with that of autolysis index. When the fruits were stored for 1 month at 4 ℃,minor change in the cellu|ase activities was observed,with nearly 100μg/(mL · h) during the whole course. Autolysis of the fruit pulp only took place at the late stage of storage. However,during the subsequent shelf period the cellulase activities were quickly elevated,reaching 150μg/(mL · h) 24 hours after transferance. Meanwhile, the autolysis index was also enhanced.
