壳聚糖处理对枇杷贮藏效果的影响 被引量:13

摘要 试验研究了经壳聚糖处理的"白玉"枇杷在低温贮藏过程中可溶性固形物、总酸、总糖、维生素C含量、果实失重率、腐烂率、果皮相对电导率以及呼吸速率的变化情况。结果表明:壳聚糖处理可以显著降低枇杷果实的失重率,廷缓总糖、总酸和维生素C含量的下降,抑制腐烂的发生,体积分数为1.5%壳聚糖对枇杷的保鲜效果最佳,腐烂率、果皮相对电导率以及呼吸速率均较对照降低,贮藏32 d失重率仅为对照失重率的27.2%,总糖含量为对照的112.2%,维生素C含量为对照的128.6%。 Effects of 6℃ and chitosan on soluble solid content,total acid,soluble sugar,vitamin C,weight loss, rotting rate, relative electric conductivity of pericarp and respiratory rate of loquat( Eriobotrya japonica Lindl . cv. Baiyu)during storage under low temperature were studied. The results showed that chitosan treatment could observably reduce weight loss rate, and keep the content of soluble sugar, total acid and vitamin C. It was beneficial to preserve quality. The concentration of 1.5 % chitosan is the best condition for the fresh-keeping of loquat. The changes of rotting rate, relative electric conductivity of pericarp and respiratory rate of loquat were effectively restrained. As compared with the control, weight loss, soluble sugar and vitamin C were respectively 27.2%, 112.2% and 128.6% of the control.
