摘要
[目的]为了解海产品甲醛本底含量及污染状况,以及不同处理方法对甲醛含量的影响。[方法]2003年2月至2003年12月在烟台市4处鱼港采集刚上岸海产品4类9种218份,市场采集亚硫酸品红定性阳性海产品17份。用乙酰丙酮法对样品甲醛含量进行了测定。[结果]海产品甲醛本底含量,均值为2.177mg/kg。从市场采集17份甲醛定性阳性海产品甲醛含量为6.12~2360mg/kg,平均159.887mg/kg;近海海水及远海海水各采集10份,均未检出甲醛。[结论]海产品存在甲醛本底,本研究为制定海产品中甲醛安全限量标准及食品卫生执法提供科学依据。
[Objective]To understand the background content and contamination Of formaldehyde in marine product and the effect to the content of formaldehyde treated with different methods. [Methods]218 samples (4 categories and 9 varieties) were collected from 4 ports in Yantai from February 2003 to December 2003.17 samples were collected from the market,which were positive by quantitative analysis with sulfurous acid rubine. The content of formaldehyde was tested with acetylacetone. [Results]The. average value of the background content of formaldehyde in marine product was 2. 177 mg/kg. The content of formaldehyde in 17 positive samples collected from the market was 6.12-2 360 mg/kg. Formal- dehyde was not detected in 10 sea water samples collected from costal waters and distant waters, [Conclusion]There was background content of Formaldehyde. in marine products. The study can provide scientific basis for formaldehyde safety limited quantities in marine products and the implementation of laws on food hygiene.
