2006年乳山市街头饮食摊点卫生状况调查

摘要 [目的]掌握2006年乳山市街头饮食摊点的卫生状况。[方法]采用食品卫生学调查方法,按食(饮)具检测方法及食品采样检验方法,对乳山市98家街头饮食摊点进行了全面监督调查。[结果]卫生许可证覆盖率69.39%,健康证持证率85.10%,卫生条件合格率仅为19.39%;抽取食品样品合格率为68.75%,食(饮)具细菌学检测合格率仅为66.33%。[结论]街头饮食摊点食品污染较为严重,其食(饮)具消毒失控,对广大消费者已构成严重的饮食卫生隐患,街头饮食摊点卫生状况急待进行综合整治。 To understand sanitary condition of street food stand. [Methods]Supervision and food hygiene investigation were conducted on 98 street food stands in Rushan with tableware examination and food sampling methods. [Results]69.39% of the street food stands had hygiene license, 85, 10% of the pedlars had health certificates, only 19.39% of the street food stands were up to sanitary standard,the qualified rate of food randomly collected was 68.75% and the eligibility rate of bacteriological test for tableware was only 66.33%. [Conclusion] Food contamination at street stands was comparatively serious. Tableware disinfection was out of control with severe hidden trouble to the consumers. Sanitary administration and supervision on street food stands should be strengthened.
