摘要
番茄红素可防治癌症和心脑血管疾病,在医药保健品市场具有良好的市场前景。本研究在番茄红素提取的前处理阶段以含氮化合物处理番茄匀浆,提高番茄红素的合成量,安全有效地降低番茄红素的生产成本。本试验对含氮化合物进行了筛选,并得到最佳含氮化合物硫酸铵处理的条件是:添加硫酸铵20mg·g-1,2-叔丁基对苯二酚(TBHQ)0.3mg·g-1于番茄匀浆中,25℃下恒温处理60min,其乙酸乙酯提取物中番茄红素的含量提高了46.2%。
Lycopene can prevent and cure cancere and cardiovascular disease and has a good prospect in medicine and functional food market. The impact of nitrogen compound on the biosynthesis of lycopene in fruit homogenate was studied in order to improve the lycopene output and reduce the production costs. The different kinds of nitrogen compounds were choosen at first. The best condition was ammonia sulfate and TBHQ added to the tomato homogenate until the final concentrations to 2.0% and 0.03% at 25℃ for 60min, The content of lycopene in its ethyl acetate extraction increased 46.2%,
