摘要
葡萄糖氧化酶是酶应用技术领域中一种非常重要的酶,作为国家允许使用的酶制剂之一,它在食品、医药、饲料等行业中得到了广泛应用。该文简要介绍了葡萄糖氧化酶及两种菌种的葡萄糖氧化酶的发酵生产,对发酵工艺的影响进行了探讨,并展望了其在食品工业上的应用前景。
Glucose Oxidase is one of the important enzymes that is widely used in enzyme technology field. It is widely used in food, pharmaceutical and feed as one of the officially-permitted used enzymes in China. This paper presented Glucose Oxidase and the fermentation of Glucose Oxidase used two kinds of mildews, discussed the effects of fermentation conditions and prospected the use of Glucose Oxidase in food field.
