摘要
以猪皮为原料,首先对猪皮胶原蛋白进行高温变性处理,再酸解,用硫氰酸铁法(Ferric thiocyanate method,FTC法)和硫代巴比妥酸法(Thiobarbituric acid reactive substances assay,TBA法)评价酸解产物的抗氧化活性。并对酸解产物进行氨基酸分析和脱盐。结果表明:猪皮高温处理5min,然后酸解7h,产物表现出较好的抗氧化性。
The hydrolysis of pig skin collagen was obtained by HCI treatment after denaturalization with high temperature. And the antioxidative activity of the hydrolysate was estimated by Ferric thiocyanate method (FTC) and Thiobarbituric acid reactive substances assay (TBA). The hydrolysate was desalted and the amino acid content was also obtained. The suitable hydrolysis condition was: denaturalization time 5min, and total hydrolysis time 7h.
