摘要
阿拉伯木聚糖是谷物细胞壁多糖的重要组成部分,对啤酒的过滤有着重要的影响。通过介绍真菌木聚糖酶在小麦啤酒酿造中应用,从而较好地解决了小麦啤酒生产中存在的过滤难题。
Arahinoxylans consititue a maj or fraction of cell wall polysacch aride.They made considerable effects on beer fiheration. This paper intro dues the application of shearzyme 500L in wheat beer brewing process. By using shearzyme 500L ,the fiheration difficulties has been solved, then we produced the wheat beer that has unique flavor.
