摘要
通过对乳酸菌和双歧杆菌在豆乳中生长情况的研究,利用它们对豆乳进行发酵,制备酸凝豆乳,并确定了主要工艺参数。
In this paper,the growth of lactic acid bacteria and Bifidobacterium which were inoculated in soymilk was studied.The lactic acid bacteria and Bifidobacterium were used for fermentation soymilk to make set type products,and the main production procedures were defined.
