摘要
建立以评分法为核心的食品感官分析心理学和数学模型,有针对性地设计了食品感官分析计算机系统CSFSA。该系统解决了编码的“双盲法”、品评员行为监督、品评表开放设计、柔性操作环境、感官属性图示等技术难题,在保证品评过程的公正性和保密性方面形成了特色,推动了我国食品感官分析技术的现代化,在不同食品类型的感官品评中具有应用前景。
CSFSA is a solfware package for food sensory evaluation in China. The prin-ciple of CSFSA' S structure is described. That include evaluate programming,database defini-tion, mathematical model. Some technology problems are solution, as coding rnethods, pan-eltables design,panelist behave control,flexible operation means etc. It is concluded that CS-FSA have the potential to improve the accuracy of sensory testing.
