Bitter gourd is a plant of momordica and belongs to Cucurbitaceae family. It is planted in the eastern India originally. Fruit of bitter gourd is rich in active ingredients of saponins, polypeptides, proteins etc. The saponins of bitter gourd had been used for the treatment of hyperglyc-emia, high blood-fat, oxygenation, improving immune function, etc. Study on the saponins of bitter gourd not only offer new approach for exploiting soybean, but also provide reference for logical meal.
