摘要
采用高压灭菌锅和高压锅产生的高温蒸汽处理茶鲜叶,研究高温蒸汽处理对绿茶中没食子儿茶素没食子酸酯(GCG)含量的影响。结果表明,茶鲜叶经过高温蒸汽处理,能有效提高绿茶中的GCG含量,并且水浸出物总量有所增加,同时感官品质接近对照常规绿茶。
Treated with high temperature steam produced by the autoclave and pressure cooker, the influence of high temperature steam treatment on the content of GCG in green tea was studied in this article. Results showed that the high temperature steam treatment could effectively increase the GCG content in green tea, with the tea extract also increased and the sensory qualities being close to the controlled trial.
