真海鞘营养成分的分析与评价 被引量:6

摘要 对真海鞘Halocynthia roretzi可食部的基本成分以及氨基酸、矿物元素和脂肪酸含量进行了分析。结果表明:真海鞘可食部蛋白质、粗脂肪、灰分、总糖含量(均为质量分数,下同)分别为39.60%、6.53%、25.79%、9.19%;氨基酸含量为29.50%,必需氨基酸占氨基酸总量的51.40%,特别是呈味氨基酸占氨基酸总量的36.37%,各必需氨基酸的氨基酸平均得分为90.0±15.7;真海鞘可食部含有丰富的矿物元素Na、Mg、Ca、P、Fe、Zn、Cu、Co、V、Mn,特别是Zn的含量(730.7 mg/kg)远高于其它海洋动物;真海鞘可食部富含必需不饱和脂肪酸,可以作为n-3系列不饱和脂肪酸的来源。 The nutritional composition of the edible parts of ascidian Halocynthia roretzi including crude protein, crude fat, carbohydrate, ash, amino acids, mineral elements as well as fatty acids was analyzed. Results showed that there were 39.60% of crude protein, 6.53% crude fat, 25.79% ash and 9.19% carbohydrate in the edible parts of the ascidian. The animal had 29.50% of amino acids, in which the essential amino acids comprised 51.40% of the total amino acids, especially 36.37% of the delicious amino acids in the total amino acids with the average score of essential amino acids of 90. 0 ± 15.7. The results also indicated that there was rich mineral elements such as Na, Mg, Ca, P, Fe, Zn, Cu, Co, V, and Mn in the edible part of the animal, especially Zn. Halocynthia roretzi as source of n -3 series polyunsaturated fatty acids was rich in unsaturated fatty acids.
