Shrimps(Penaeus chinensis) averaging 9.02cm in body lenghth as the exper-imental material were cultured in our laboratory from June to September, l996' Theprotein content of hepatopancreas, stomach and nddgut were measured by Biuret reaetion. The protease activity was measured by Folin-Phen reaction; the amylase andcellulose activity by the Somogyi method. The shrimps were fed with dry supp-lemented added with l0% beet dregs or l0% various mould fermented beet dregs;and the effects of these two kinds of feed activities were studied. The results were asfollows:l. The protein content in hepatopancreas, stomach and midgut was 7.95- 9.30μgand was not affected by the diet supplemented with l0% beet dregs or l0% beet dregsfermented by Trichoderma koningii and Asper gillus niger.2. The protease activity in hepatopancreas, stomach and midgut was 0.892μg /minin the shrimp fed with the diet supplemented with l0% beet dregs; and 0.222μg /minfor the shrimps fed with l0% beet dregs fermented by T kontwii and A. niger.3. The amylase activities were increased in the shrimps fed the diet supplementedwith l0% beet dregs or l0% beet dregs fermented by T koningiiand A. niger,and3.349μg /min, 3.711 μg /min respectively, and the control was 2.66μg /min respectively.4. The cellulase activity of the shrimps was increased only by the diet supple-mented with l0% beet dregs fermented by T koningii and A. niger, and was0.45lμg /min. The cellulase activity of the shrimps fed with diet supplemented withl0% beet dregs was 0.l l06μg /min, and was 0.2043μg /min in the control.
