摘要
综述了我国天然食用色素开发的原料资源、品种、提取方法与新分析技术,并深入分析了我国天然食用色素开发存在的关键问题、发展方向和开发的前景。
The raw materials, varieties, methods of extraction and new analysis technique of natural food pigment in China were summarized. At the same time, key problems and prospects of the development of natural food pigment in China were analyzed.
