摘要
宁波名菜具有鲜明的特色。文章通过对宁波名菜的品种类型、刀工成形、烹调方法、滋味类型、色彩、质感等六个方面进行定量分析,得出宁波名菜的总体特点,从而对宁波名菜有更加清晰的认识。
Ningbo famous dishes have distinct features. This paper focuses on the total characteristics of Ningbo famous dishes by standardized analysis to the types, shapes, cooking methods, tastes, colors and other sense qualities. By studying on these issues, people could have thorough ideas about the dishes.
