摘要
研究了采用2709碱性蛋白酶水解脱铬革屑制备胶原水解产物时,影响胶原水解率的各种因素。研究表明,最佳水解条件为:酶量0.12%,pH10.0,温度50℃,时间40min。在此条件下,胶原的平均水解率为62.9%。同时测定了最佳水解条件下所得胶原水解产物的理化特性。
2709 alkalic protease was used to hydrolyse dechromed chrome shavings, and the factors that may affect the collagen hydrolysis ratio, including the amount of 2709 alkalic protease, temperature, pH and time of hydrolyzing reaction, were studied. The optional hydrolyzing conditions were as follows: alkalic protease 0.12%, pH 10.0, 50℃, 40min. Under such conditions, the average hydrolysis ratio of collagen was 62.87 %, and the physical and chemical properties of collagen hydrolysate were also studied.
