摘要
介绍食用天然色素的纯化及存在的问题以及今后我国天然色素的发展和研究的重点。
The methods and some problems of purifcation in natural pigments are reviewed in this paper meanwhile, the developments and work points of researching for natural pigments in China are also discussed.
