大豆异黄酮的保健功效及其治疗作用 被引量:7

摘要 20世纪50年代以来,大豆功能食品的保健和治疗作用,越来越受到国际上特别是医学界的重视,一度形成所谓“大豆热”,大豆的主要成分——大豆异黄酮作为一种功能因子也引起了研究机构、保健专家及公众的强烈兴趣。与此同时,关于应用大豆产品的负面作用的一些信息,又使得人们对大豆产品特别是大豆异黄酮的应用产生诸多顾虑。因此,客观、准确地认识应用大豆产品的风险及益处是很有必要的。本文将对大豆异黄酮的组分、加工及体内代谢过程等问题进行综述,同时对其在预防及治疗慢性病方面的研究进展作简要的概括,以期对大豆异黄酮的相关研究结果进行准确客观的解释,并为当前及今后的研究提供帮助。
