摘要
采用国标法对乳中碱性磷酸酶(ALP)检测,结果显示:全乳和脱脂乳的酶活力分别为403.345、148.8147μg/ml,变异系数分别为1.30%、2.99%。与国标法的不同之处:乳样最佳稀释比为1∶25,苯酚的最佳浓度为50μg/ml;然后对其模拟巴氏消毒得出:63℃30 min基本使ALP灭活。
The result of using the national standard to measure the alkaline phosphate (ALP)in milk is as follows: the activity of enzyme in the whole milk and skimmed milk is 403. 345μg/ml, 148. 8147 μg/ml respectively; the coefficient of variation is 1.30 %, 2.99 %, respectively. All these point this method is good and stable. The difference compounded to the national standard: the best dillution ratio of milk samples is 1 : 25, the right consistency of phenol is 50 μg/ml. The conclusion by simulating pasteurization: ALP is inactived at 63℃for 30 min.
