摘要
对传统湿热高温灭菌和微波灭菌培养料栽培的平菇子实体的营养成分进行了对比研究.结果表明,氨基酸、蛋白质、粗脂肪及水分的含量,2种子实体间相差不大,而总糖、粗纤维、粗灰分、矿物元素和维生素的含量有明显的区别.主要表现为总糖、铜、铁和钙在湿热高温灭菌培养料栽培的平菇子实体中的含量较高,而粗纤维、磷、锌、硒、VB1及VB2含量在微波灭菌培养料栽培的子实体中较高.试验证明,微波灭菌培养料栽培平菇对其营养价值没有不利影响,硒、VB1等营养成分还有明显提高,微波灭菌技术可以在平菇培养料灭菌中应用.
Nutritional components of Pleurotus ostreatus fruiting bodies cultivated with media sterilized by using common method of moist heat sterilization and microwave sterilization respectively were analysed. The results showed the fruiting bodies were indiscriminated in amino acid, protein, crude fat and moisture; distinction was present in total sugar, dietary fiber, ash, mineral element and vitamin. For instance, the contents of total sugar, Cu, Fe and Ca in fruiting body cultivated with media sterilized by using common method were higher. At the same time, contents of crude fibre, P, Zn, Se, VB1 and VB2 in fruiting body cultivated with composts sterilized by using microwave sterilization technique were higher. It was proved that microwave sterilization technique could be adopted to replace the common method in the cultivation process of Pleurotus ostreatus. The research results showed there is not harmful influence on Pleurotus ostreatus fruiting body cultivated with media sterilized by microwave. On the other hand Se and VB1 were increased obviously.
