摘要
采用正交实验法,比较研究用量、pH、温度和时间4因素对活性炭脱除猪血红蛋白酶解液色泽效果的影响。结果表明:活性炭的添加量为1%,pH为4.0,温度为80℃,时间为40min时,猪血红蛋白酶解液脱色效果明显,蛋白质损失较少。
The effects of the quantity of activated carbon, pH, temperatures and time on decoloration of porcine hemoglobin hydrolysate by enzyme were studied.The results showed that obvious decoloration and lower loss rate of protein were obtained under the following conditions: the quantity of activated carbon 1%, pH4.0, temperature 80℃ and time 40minutes.
