锌对茶鲜叶品质及膜脂过氧化作用的影响

Effects of Zn ++ on Quality and Lipid Peroxidation in Leaves of Tea

研究了锌对茶鲜叶品质及膜脂过氧化的影响。结果表明：质量分数Ｗ为０．００１～０．００５的ＺｎＳＯ４均能有效增加茶鲜叶氨基酸和还原糖含量，低浓度效果更佳；锌还能提高超氧化物歧化酶（ＳＯＤ）活性，降低过氧化物酶（ＰＯＤ）、多酚氧化酶（ＰＰＯ）活性。与此同时，膜脂过氧化产物丙二醛（ＭＤＡ）含量下降，说明锌能减少自由基对膜的伤害，促进茶树的生长代谢。

The physilogical effect of Zinc on leaves of tea was studied in this paper.The results showed that 0.1￣0.5% ZnSO 4 could increase the content of amine acids and glucose,advance the activity of SOD and decrease the content of MDA in leaves of tea.In addition,ZnSO 4 could also reduce the activity of POD and PPO.All of these effects indicated that Zn ++ might promote metabolism of tea plant by inhibiting lipid peroxidation.
