STUDY ON THE EFFECTS OF GREEN TEA ON HEALTH PROTECTION

摘要 [目的]探讨绿茶保健作用。[方法]应用722分光光度仪测定绿茶中茶多酚含量,应用原子吸收分光光度仪测定微量元素含量及溶出率。[结果](1)绿茶等级越高其氨基酸、茶多酚的含量越高,锌含量亦越高。不同等级间茶多酚、微量元素锌含量差别甚大,茶多酚含量高者达36.2%,低者仅10.9%。锌含量高者达53.2μg/g,低者仅35.25μg/g。(2)铜、铁含量不高且品种间差别不大。(3)锰、氟、铝含量则随茶叶等级降低而升高,且品种间含量差别甚大。(4)5种绿茶中锌的溶出率均较高,达79.95%~88.26%,铜达70.6%~92.89%,氟达72.75%~95.63%,铁多为35%左右,锰36.08%~44.66%,铝8.81%~51.69%。[结论]高级别绿茶具有保健作用,低级别绿茶无益于健康。 [Objective] To discuss the effects of green tea on health protection. [Methods] The content of green tea polyphenol was determined by spectrophotometry. The content of trace elements and its dissolution rate were determined by using atomic absorption spectrometry. [ Results] (1) The grade of green tea was higher, the contents of amino acid, tea polyphenols and zinc were higher, and there were great differences in contents of tea polyphenols and zinc between various grades of green tea. The contents of tea polyphenols was as high as 36.2%, and the lowest was only 10.9%. The content of zinc could reach 53.2 mg/kg while the lowest was 35.2 mg/kg. (2) The contents of copper and iron were low and had a httle difference between various teas. (3) The grade of green tea was higher, the contents of manganese, Fluorine and aluminum were lower, and there were great differences between all kinds of teas. (4) The dissolution rate of zinc was high in five kinds of green teas, which was in the range of 79.95%-88.26% ; while the dissolution rate of copper was in the range of 70.60%-92.89%, and the dissolution rate of fluorine was in the range of 72.75%-95.63%, the rate of iron was about 35%, the rate of manganese was in the range of 36.08%-44.66%, as well as the rate of aluminum was in the range of 8.81%-51.69%. [Conclusions] The green tea of good quality has good effects on health protection, whereas the green tea of low grade has no benefit for health.
