摘要
挤压技术是一项食品工程高新技术,相对于其它的食品加工工艺技术,以其较优越的加工特性,成为生产营养保健食品的有效方法。针对膳食纤维、谷物营养保健食品加工挤压技术的应用研究表明,挤压可以稳定和改性膳食纤维。
Extrusion technology is one of the advanced food engineering technology. Compared to the other technologies, it is an efficacious method used in processing nutritional health foods with its predominant processing characteristic and receiving people's more and more extensive concern. This paper aimed at the applied research of extrusion technology in the dietary fibre and nutritional health grain foods to exposition mostly. Have done the prospect to the developing orientation in the future.
