本文综述了超声波在变性淀粉和淀粉糖生产中的应用,并对其作用机理、对淀粉结构的影响和发展前景进行了论述。
The review introduced the application of ultrasound to modified starch and starch sugar,moreover,it discussed ultrasonic acting principles,the influence of ultrasound on the structure of starch and the prospect of ultrasonication.
