摘要
以俄罗斯鲟、史氏鲟、西伯利亚鲟、达氏鳇4个品种的19尾活体鱼为试验材料,按照鱼体质量>10 kg和<5 kg分组进行解剖,得出了13个解剖部位的质量分布情况。试验结果表明,鲟鱼的出肉率约50%,且史氏鲟最高,其他依次为西伯利亚鲟、俄罗斯鲟、达氏鳇。
19 fish samples from 4 different sturgeon species including Russian sturgeon(Acipenser gueldenstaedti),Amur sturgeon(A.schrencki),Siberian sturgeon(A.baeri) and Siberian huso sturgeon(Huso dauricus) were divided into two groups on the basis of body weight 〉10 kg and 〈5 kg and the distribution of dressed fish was determined in 13 different dissection parts.The results showed that the fish had the dressed rate of about 50% with the descendant order as Amur sturgeon〉Siberian sturgeon〉Russian sturgeon〉Siberian huso sturgeon.
