Competitive Advantage Evolution and Innovation of the Type of Operation in Chinese Catering Industry

摘要 近年来,我国餐饮业一直保持旺盛的发展势头,但餐饮业的竞争优势却未能与产业规模保持同步提升。集中程度低、企业竞争力缺乏一直是困扰我国餐饮业发展的突出问题,这对餐饮业参与国际竞争尤其是奥运背景下国内餐饮业的国际化发展是非常不利的。通过从业态角度对这一现象剖析得出:我国餐饮业一直维持比较传统的业态模式,缺乏主动适应市场的创新意识,而基于竞争优势变迁的业态创新将为我国餐饮业的发展发挥积极的推动作用。 In recent years, Chinese catering industries keep uprising sharply, but the competitiveness doesn't keep in pace with the enlarging business scale. Low degree centralization and lack of competitive- ness are two major problems hindering Chinese catering from further developing, which runs contrary with catering industries participating in international competition especially the internationalization of the domestic industries against the Olympics background. Analysis of the phenomenon from the perspective of type of operation comes to the conclusion: Maintaining the conservative traditional mode, domestic catering indus- tries are not innovative and conscious enough to adapt to the market; Innovation of the type of operation on the basis of competitive advantage evolution will play an active role in propelling the development of Chinese catering industry.
