摘要 [目的]了解龙岩市西餐食品卫生质量状况,为监督管理提供科学依据。[方法]2003~2006年连续4年对龙岩市西餐经营单位的食品及食品包装用品抽样检测结果进行分析。[结果]共检钡4125份食品,合格率为62.4%。其中生菜合格率最低,为16.67%,冰淇淋、汉堡、冰块次之,合格率分别为43.75%、44.44%、55.56%,可乐、薯条、鸡块合格率分别为77.78%、94.74%、100.00%。2003、2004、2005、2006年西餐食品合格率分别为54.29%、58.82%、64.29%、75.00%。86份食品包装用品中,合格率为86.05%。[结论]加大监督监测力度,督促经营者加强卫生质量管理,严把进货关,不断改进工艺,使其不断改善加工环境。 [Objective]To know the western-style food hygiene in Longyan, provide scientific basis for inspection and management. [Methods]Analysis of the test results for food samples and the package from 2003 to 2006 was conducted. [Results]125 food samples were tested, the total qualified rate was 62.4%. Among them,the rate of lettuce was lowest, only 16.67% ; ice-cream, hamburger and ice-cake were better, it was 43.75%, 44.44% and 55.56% respectively, and 77.78 % for cola,94.74% for French fries, 100.00 % for fried chicken. The qualified rate of western-style food from 2003 to 2006 was 54.29%, 58.82%, 64. 29% and 75.00% respectively. The qualified rate of the 86 package samples was 86.05 %. [Conclusion]The inspection and management should be strengthened especially on material, technique and improving. of working environment.
