为传承传统生产工艺,介绍了镇江香醋的生产工艺,包括原料的处理、酒精发酵、醋酸发酵及淋醋浓缩等各工序。
In order to develop traditional local products, the producing technologies of Zhenjiang vinegar are intro- duced, including raw materials process, alcohol fermentation, acetic acid fermentation and the concentration of sprinkled vinegar etc.
