摘要 本文叙述了南极大磷虾(Euphausia superba)氨基酸组成的测定结果。大磷虾含有17种氨基酸,其中谷氨酸和天门氨酸的含量最高,分别占氨基酸总量的13.73%和10.35%;半胱氨酸的含量最低,只占总量的1.18%,其次为组氨酸和甲硫氨酸。除色氨酸外,7种人体必需的氨基酸占氨基酸总量的43.65%。作者还对氨基酸总量与蛋白质含量之间的关系、个别氨基酸的含量与其他作者所发表的结果作了比较分析。 The amino acid composition of E. superba caught in Jan. 1985 was analysed in this paper. The krills had seventeen kinds of amino acids. Glutamic and aspartic acids were the highest in content and were 13.73% and 10.35% of the total amino acid content respectively. Cystine content was the lowest and only had 1.18%. The next was histidine and methionine. Except tryptophan, the seven kinds of amino acids essential for human body amount to 43.65% of the total amino acid content. The authors also analysed the relationship between the total amino acid content and the protein content and discussed some amino acids content reported by predecessors.
