膳食暴露评估模型及其构建方法 被引量:12

摘要 膳食暴露评估是食品风险评估的重要组成部分,是对生物性、化学性与物理性因子通过食品或其他相关来源摄入量的定量或定性评估。其评价主要从观察个体消费量、食物污染物残留浓度数据等方面进行。笔者在给出膳食暴露评估确定性模型的基础上,重点介绍了新近出现的概率性模型的构建方法,以期为我国膳食暴露评估工作带来一些有益启示。
