摘要
果糖低聚糖作为甜味剂有着优越的功用:难消化、低热量、防龋齿、防糖尿病等。它是一种性能稳定的混合物。以蔗糖为原料用微生物法进行大生产相对简单。
Fructooligosaccharide having 1~3 fructose units bound to the β 2,1 position of sucrose, is a kind of functional sweetener. They have become of major interest due to their favorable properties, such as low calorie, consecutive improvement of intestinal microbial flora, promotion of animal growth, relief of constipation, decrease of total cholesterol and lipid in serum, anti tooth decay and anti diabetes. This review presents its functional properties and application as food additives as well as its production with sucrose.
