摘要
清爽型黄酒在香气上具有特殊的清醇、柔和、细腻、鲜爽的气味,是由生物自然发酵形成的。其口感、风格具有柔和、爽适、淡雅、纯净、鲜美的感觉。清爽型黄酒的酒体设计应降低主要骨架成分含量,相应地增加复杂成分的含量和种类;技术是采用新工艺方法控制原酒生产的工艺条件(包括原料、糖化发酵剂、发酵工艺、添加芳香植物料、合理贮存、酒基组合勾兑等)而得到实施。
The light rice wine, produced by natural fermentation, smells mellow, soft, exquisite and fresh. The tasty and style of light rice wine should also be soft, fresh, elegant, pure and delicious. During wine regulation, the main alcohol components in light rice wine should be reduced, while the contents and varieties of complete components should be increased. Using novel technology to control original rice wine production, the measures for light rice wine production, including materials, saccharification and fermenting agents, fermentation processing, aroma plant addition, storage, and blending etc. could be really actualized.
