摘要 目的建立辣椒素的含量测定方法。方法高效液相色谱条件:Gemini C18(4.6 mm×25 mm,5μm)色谱柱,乙腈-水(48∶52)为流动相,检测波长为281 nm。结果辣椒素的平均回收率为102.24%,RSD=1.68%。结论该方法快速简捷、准确可靠,可用辣椒中辣椒素的含量测定。 Objective To establish methods of Capsaicin determined in pepper by HPLC. Methods HPLC conditions are with Gemini C18 column (4.6 mm × 25 mm,5 μm) and mobile phase consisted of acetonitrile-water (48:52 ) with a flow rate of 1.0 mL · min^-1. The detection wavelength was at 249 nm.. Results The average recovery and the relative standard deviation was 102.24% and 1.68% ( n = 9 ) , respectively. Conclusion The method was simple and accurate, and suitable for the content determination of Capsaicin in pepper.
