摘要
研究以玉米为主要原料,采用红曲霉菌,通过液体深层发酵生产红曲色素的最佳培养基组成及其相关工艺条件的选择。摇瓶结果表明,按最佳培养基配方,以8%~10%的接种量,32℃经过72~96h的摇瓶培养,发酵液红色素色价基本稳定在120μ/mL,最高达150~160μ/mL,湿菌体收率为培养液的12%,湿菌体色价为800~1000μ/g。
The study of using corn as a main material producing pigment by the molds belonging to the genus monascus in a submerged culture was reportedin this article. The optimum medium and relative culture conditions were selected. Results of shaken flasks experiment shows that with the optimum medium, 8%-10% inoculum, temperature 32℃, cultivating time 72-96h, the colour value of the fermentation broth was stable at 120μ/mL,and the highest reached 150-160μ/mL. Wet mycelia production rate was 12% of the liquid medium weight and the colour value of the wet mycelia was 800-1000μ/g.
