摘要 首先通过选择试验选择乙酸作为最佳提取剂,然后按照4因素3水平正交L9(34)试验设计对浸提剂浓度、浸提温度、浸提时间及不同物料配比对紫玉米花青素提取率的影响进行了研究[1-2],确定其最佳提取条件为:pH2.5乙酸溶液作浸提剂、在60℃的温度条件下加热60min、物料配比在1∶15,其二次提取得率可达80.1%。 Acetic acid was chosen for the best extraction solution by the choice experiment in this paper, then orthogonal comparison of four factors and three levels, L9(34) was designed to study the impact of various factors on the process, i.e. the impact of extraction concentration, extraction temperature, extraction time and the ratio of different materials on the rate of extraction of anthocyanins from purple corn. According to the results the optimum extraction conditions were determined as follows: pH 2.5 acetic acid solution for extraction solvent, the temperature heating at 60℃ for 60 minutes, the ratio of materials for 1:10. The ratio of extraction for twice reached 80.1%.
