摘要
分析测定了贵州三穗麻鸭肉、蛋中粗蛋白质、脂肪、氨基酸、矿质元素和维生素的营养成分含量，并与北京鸭肉、蛋的营养成分含量进行了比较分析。
Some nutrients (including Crude protein, fat, amino acids, some trace--clements and vitamines)in mrscle and egg of Sansui sheldrake duck in sansui, Guizhou were analysed, and data obtained were discussed statistically.
